    Nice video thank you for sharing, Don't know if it can help you but I cook my bread on a stone and I add a pan on the very top level to cover the heaters so that they don't burn the bread. You will have an even more explosive, more puffy look to your bread as the heat comes more from the bottom.

    To me this looks like an entire meal of bread, wow! Crusty but also moist is my kind of bread. This takes a bit of time but your patient and calm instruction makes it seem doable. Im still afraid to make my own bread lol but Im saving this recipe to my favorite, favorites file. A warm rich cream soup and this bread would be heaven. Merry Christmas, and God bless you, Shirley.
