My first thought was menudo, which would make a good episode, not to mention an excellent supper.
The way we do it in hotel is almost the same way but in sauce we add carots and litle celery and put tripes and bit of bread crumbs and cook for 20 min more

There is nothing Romano in this recipe. Well in Italy they use tripe but that's it. This must be an invention of your father.

When learning to make menudo, I learned that you have to make sure you buy the bleached tripe AND salt and scrape (with a knife), then rinse and repeat over and over to get the tripe clean enough to eat. (Yeah, that’s why I only made menudo once, even if it came out delicious. Like, who’s got that much spare time?)
Is it possible to buy it already so clean that you just cook with it?

You can eat it raw and unadorned, it's quite popular amongst older folks in England. Just a dash of salt and pepper.
