Looks delicious and I’ll do it today, can you please tell me what can I substitute the pancetta with, simply because we don’t eat pork, advice will be appreciated.
    Thanks!!

When learning to make menudo, I learned that you have to make sure you buy the bleached tripe AND salt and scrape (with a knife), then rinse and repeat over and over to get the tripe clean enough to eat. (Yeah, that’s why I only made menudo once, even if it came out delicious. Like, who’s got that much spare time?)
Is it possible to buy it already so clean that you just cook with it?
