    One pound radishes, about one inch in diameter. Washed. Quartered. Toss in a few tablespoons of oil. Salt, pepper, whatever spices you want. 350 degree oven. Uncovered. They start to lose the radish taste at 10 minutes. Softer crunch at 20 minutes, and still throwing off a lot of moisture. Still not fork tender at 30 minutes. The bright red softens to a purple then a dark pink. Ready to eat at 45 minutes. No browning. The texture reminds me of the steamed-soft cauliflower stems without that stronger taste. Nice mash in a food processor. Final word: Delicious, to me, but the flavor really comes out from what's in and around them. Use the hotter, shorter baking time if you want brown, crispy edges. I ate mine right out of the oven with a little leftover keto turkey gravy, because I couldn't wait, but eat your radtatoes however you like. Seems pricey at $3/lb, so this spring I suppose I grow my own. I'm eager to try them boiled and made into mom's potato salad, now radtato salad.

    I love radishes and been eating them since I was a child..tried roasted radishes last year and my family loved it..it's on our weekly roasted veggies rotation..redmond sea salt is awsome..I use that and celtic sea salt..new subscriber (from VRA) 😉🔔👍😍
