Have tried many methods of cooking turkey and this was the best by far.
I followed this recipe and the Turkey was delicious and juicy. We did add more stuff to the brine, and put some aromatics in the butt instead of stuffing. Next time, we will also spread herb butter between the skin and meat instead of just on top. The cooking method and general timing were good. We will make it this way again, with our own special tweaks.
Thank god we have a pioneer lady that gave us a delicious recipe.

I cook a 20lb bird in 2.5 hrs, unstuffed of course, 6hrs is ridiculous, brined or not that bird will be dryer than a popcorn fart!

I'm with Chuck…stuffing in the bird…It's the only way for me.
I have tried so many different recipes from Alton Brown, Martha Stewart and Barefoot Contessa…and this one is by far the best I have ever made. I have made it every single year for the past four years. It does not disappoint. Truly amazing!
This is the best method I've tried for making turkey. And I've tried them all!! I've used Ree's method for the last four years, minus the orange peel. Excellent!!

A pastry brush would work better to smear the butter than your hands. Buttery fingers are difficult to clean.

Why on earth would you drain, rinse, soak the brine off the turkey, just to slowly bake it for 3 hours?
When she pulled back that foil, I nearly hollered. That chicken was whiter than the KKK annual picnic.
No amount of compound butter will flavor the turkey throughout, especially if you're buttering while hot, and a bird of twenty pounds needs more direct seasoning.
I'm surprised the cavity was not seasoned or stuffed with any aromatics. She missed the mark with us folks round here.
Different strokes for different folks, I guess. But round here, even the wishbone gets suckled, because the flavor is just so good, when a well seasoned bird is prepared.
Ree, we still love you. But one year, come up here on Tuesday/Wednesday before Thanksgiving, and pull up a chair, roll up your sleeves, and watch the magic happen. We drink, chop, prep, giggle and make miraculous dishes. *Oh, and will have plenty of squishy stuff for your gentleman friend. North Carolina Rocks!

great recipe and for once someone actually stuffed their Turkey and who cares if it takes a bit longer to roast because nothing smells as good as a stuffed,roasted Turkey and the flavour of that stuffing is amazing!!
