It was about a month after receiving my second dose of Astra Zeneca Covid vaccine in Germany that the autoimmune disease Polymyalgia Rheumatica hit me like a Mack truck even though I had been on a Whole Food Plant only eating regime for 7 months. I'm now on a low dose steroid treatment but hoping to be off of that by following the plant only diet faithfully (it's been 2 years now) and doing some fasting. This was a terrific videocast, as usual, Chef AJ. Thanks for all you do.

54:34 does miso have added salt? I know some don't, but I remember some do?
54:05 I tried raw but the issue is that the food is so watery it's too hard to get nutrients that way – so adding salt makes the food digestible by removing the water. I also notice I tend to be really low on salt and that gives me headaches and sensitivity to sunlight. Still if we can get it from food, that's better. I think if non-watery food like basil vs celery is eaten more – then there's probably less need for salt?
49:13 I don't even eat cashews (for ethical and health reasons – it's not grown locally to me and the toxins) – I'd rather do watermelon seeds.
48:57 rawveganse made I believe the watermelon seed milk and even possibly a poppy seed milk. Where I live they do sell watermelon seed butter – it tastes like white chocolate!

5:36 I think it's a gift too and people think 'well just remove it' and judge you in disgust when you want to keep it – because it seems bad, but really it's just showing you the way towards being better!
3:22 sounds pretty similar to my life lol. I actually got into this state when I moved to california at a higher elevation. Immediately! I wasn't like this when I lived at sea level outside of the state. I believe it has to do with trees and humidity, but maybe that's me. 7:00 maybe it was the change in location that overtriggered my immune system?
0:41 ok we live around the same area – since I live in California too. I did a map tool to show where the furthest point is – and it actually turned up in teh middle of the ocean near madagascar and South Africa. When you ride it up – it goes through oman and russia and iran. I was thinking Kazakhstan would be the furthest from me – and riding it up the latitude – I would be right. Azerbaijan I was close to thinking that too – it also counts lol. That said India really is close and touches it almost – so it kind of counts – as it will be pretty hard to get guests from these countries (except maybe iran and russia – then again what am I thinking?) on the show.
0:41 I was thinking about this today – I was thinking the middle east is the furthest geographically but india the furthest by time zone from california. I'll double check.
