I don’t know how pectin works so I could completely be wrong here, but would using pectin in place of gelatine make the French onion filling hold its shape better and let it become more solid at higher temps? Or is that from all the sugar in jam. I’ve definitely had warm donuts with solid enough filling (tho the filling was grainy so I’m assuming sugar or something).
Lily if you have haters I’ll fight them on your behalf because they’re wrong and i wanna fight about it.
