Quinoa Salad Bowl: Quinoa is rich in fiber & protein. You can enjoy it as salad adding some spring mix, Chickpeas, vegetables, dry fruits & dressing of your choice. Detailed recipe as follow:-
Step 1:- Bake Vegetables
– I have used here 2 cup diced Sweet potatoes & 1 cup diced Zucchini
– Coat Sweet potatoes & Zucchini Olive oil, paprika, salt & Black Pepper seasoning.
– First place only Sweet Potatoes in Baking pan, bake Sweet potatoes in oven at 400 F/ 200 C for 25 mins.
– While 10 mins are left to bake sweet potatoes, bring them out from oven
– Then add Zucchini and bake in oven at 400 F/ 200 C for 10 mins.
– After 25 mins remove the tray Sweet potatoes & Zucchini are baked.
Step 2:- Quinoa Pulao
– Wash once cup Quinoa in water.
– To cook in quinoa in instant pot, add 1 TBSP oil, cumin seeds, Pinch of Asafetida
– Add vegetables such as half cup carrot & beans, mix well.
– Add 1/2 cup quinoa again mix well, add salt as per your taste.
– Add 1 cup water.
– Then cook in Instant pot on High Pressure for 5 minutes.
Step 3:- Roast Boiled Chickpeas
– 1/2 cup Chickpeas should be soaked overnight
– Next day boil it in Instant Pot for 6-7 minutes.
– Strained the water form boiled Chickpeas or you can also use Canned Chickpeas.
– Heat pan on medium temp.
– Add 1 TBSP oil, let oil heat for 2 minutes.
– Add 1.2 cup chickpeas and mix well.
– 1 Add 1/4 tsp red chili powder, add salt as per your taste, again mix well
– Stir-Fry Chickpeas for 4 minutes.
– Chickpeas are ready
Step 4: Salad Dressing
– 3 TBSP yogurt
– 2 TSBP Grated Cucumber
– 1 TSP lemon juice
– Black pepper & salt as per our taste
– 2 tsp honey
– 1 TBSP Chopped Cilantro
– Mix all above in any cup. Dressing is ready
Step 5: Spring mix & Chopped dry fruits of your choice
Assemble the Salad bowl, by adding Baked Sweet potatoes & Zucchini, Quinoa Pulav, Roasted Chickpeas, Spring mix & dry fruits. Then spread salad dressing and mix well. Quinoa Salad Bowl is ready!!
