This casserole is full of all the things I love about pizza with not a single bit of the guilt. I added fresh spinach to the assembled "pizza" and went heavy on the sauce and cheese (because I could) and it was great.
Don't make the mistake I did: I used jarred pasta sauce because I didn't have paste on hand and mine was watery. Still tasty, just messy. Next time, I'm going to make your sauce and double it and see where it takes me.
i didnt quite have all ingredients. used well seasoned ground turkey, no olives and no sun dried tomatoes. but still DELISH and better than traditional pizza due to no crust that makes me feel bloated and heavy. thanks for sharing

I've made the slow cooker with egg noodles versions in my pre-keto days for office potlucks. I'm thrilled that I can continue to enjoy it by swapping out the egg noodles for cauliflower. Thanks for the recipe.
WOW!! This is a great recipe!!! I made it last night and it's BANGING GOOD! Tonight it is even better as leftovers!! Thank you so much for making this recipe! I minced up my pepperoni, peppers, 'shrooms, sun dried tomatoes, and black olives. I also added onions. I used Aldi's organic marinara with some tomato paste mixed in. I kept everything else the same as the 'LCL' recipe. I put it in a casserole dish because there was so much! Next time I will double the recipe for two casseroles and put one of them in the freezer for when we want a HIT OF PIZZA without the guilt of all the carbs and calories! Totally FABULOUS! I was looking for something relatively quick and easy for dinner. Saw this, had most of the ingredients so I just popped it in the oven. The cauliflower was a little mushy, but let's see how it comes out. Fingers crossed!
