    Made it the other day, it's legit. My roommate thought I ordered ramen lol. Question: I couldn't find hon tsuyu so I used some dashi powder, shoyu, and mirin as a substitute, is that fine & what's the proper ratio? I kinda did it by taste and it was really good, but I'm curious if there's a proper substitution

    I made this a few weeks ago, but did’t have access to leeks or that noodle base sauce so I made my own Tare style and used chicken stock instead of water. I didn’t use any soy sauce since the miso and stock are pretty salty already but it’s really delicious recipe, one of my favorites.
