CLASS IS IN SESSION! I thought you two retired? 😘. You just changed the location of classes and I love it! Glad to see the comparison on pressure canners. I’m seriously considering the Instant Pot to add to my Presto manual pressure canner, especially for smaller amounts of things when I get an opportunity. Jim, next time you go to Costco, check out the seriously reduced price on Office for members. It includes Excel as well Word and the est of the suite. Last time I bought it, it was $59-69 for a 5 seat family license.

I've pointed this out once before but that rubber button on the top of the Presto canner is a safety feature and should a problem arise this plug is going to go flying. In your configuration you have this plug facing you, not a good idea! The remedy is to rotate the pressure gauge 180 degrees. This will put the rubber plug on the back facing away from the operator.

Question from a newbie here: my sweet husband bought me a canner for Christmas and I want to can some syrup. The recipe from my Ball cookbook calls for light corn syrup but I really would hate to add it to my home cooked goodness. Can I substitute something like sugar water, honey or agave nectar without wrecking the recipe and making it unsafe? Thanks so much!

Thanks for all of the good information. Both of you are great teachers, and all of us watching are reaping the benefits! I purchased an Instant Pot Max after watching your canning videos, and have found it to be very convenient for canning pints for myself and my husband. For many years I used a big Presto stovetop canner, but something smaller suits our needs now. Enjoy your retirement, and thank you Pam and Jim for investing your time in all of us!

I just recently switched from a 22 qt. Mirro weighted gauge to a Presto 23 qt. Dial gauge . Now I find myself in a stool right next to the stove staring at the dial for 90 minutes. The one single time I ever walked away from it, I came back and it was waaay over pressure 🤦‍♀️

Instead of excel. Thank you for your videos. Are you familiar open office or office trio? They're basically Office without the price

I'm learning so much from your channel and so thank you both. I got a Carey digital after watching your videos so i hope you do more with it.

Thank you for doing the comparison of the different canners. I have the Presto 23 . For my elevation, I need to can at 11 pounds of pressure, but the canner only came with the 15 pound weight. Each time I have canned, it has been very difficult throughout the processing time to maintain a steady pressure. It wants to keep climbing about every 10-15 minutes. I try to keep it just above 11 so it doesn’t drop too low. But it is constant with having to keep bumping down the flame. I just bought the other weight set so I can have the 10 pound one instead of the 15. It says using that, I will ignore the gauge and only pay attention to the jiggle of the weight. I’m just wondering if I will still encounter the same issue with having to adjust the flame every 10 minutes? Is that normal or should I be concerned there is some problem that needs addressed before I continue? I am using a natural gas stove.

Hi Pam and Jim. Love the video! It would be great if you could go over the pros and cons of an all American canner, even if you don't have one to show us. I have a presto stove top canner, which works well for me. The all American looks very intimidating to me on other canning videos. Would that be included in your pressure canning course? Thanks!

Love your channel. Thanks for all you do! I have had my Carey canner a little over a year and love using it! I found boneless skinless chicken breast today for $1.99/lb. Bought 6 lbs and canned 6 pints. Grateful to have shelf stable food and I love taking advantage of sale prices!
