I have been following her channel for quite some years now and I have one of her cooking books. I have never been disappointed by her recipes, certainly not after starting to live in Thailand and enjoy daily Thai food! If I am right then she has studied food sciences in Canada, so I assume she knows what she is talking about.

Many Thai home cooks use pre-made curry pastes. Even in Thailand, people just tend to buy the pastes from a local open market or from someone local who is known for making a great curry paste. It really isn't an un-authentic thing in typical thai cooking👍🏻
About adding green color on green curry, as thai. It's ok to add blended thai basil in to the green curry because it's also one of ingredients but i don't recommend to add spinach or parsley or anything else to make it look green because it changes taste from the original one. Actually, thai green curry in thailand doesn't look that green. Some restaurants or some regions look yellow upto ingredients & recipe of curry paste.
For curious people why we called Sweet green curry because of the extremely spicy we tamed down by adding 'sweet' word in the name.😊
5:28 sweet=waan. spicy=ped. Thai cuisine especially curry and tom yum are spicy in general. so they won't included it in the name. they would just point out what make it distinguish from the other kind of curry when we name it.

Pailin also prefers Mae Ploy! She did a video taste testing different popular curry pastes (and had blunt words about a certain subpar brand that I see in American grocery stores hehe).
