When I make jam, I like to make mixed fruits. I buy the frozen wonky fruit from Tesco. When the jam is about ready, without pectin, I sieve it and my husband likes to drink the juice. He says it tastes similar to Vimto.
In the US that would be considered "freezer jam" or refrigerator jam. Our USDA tells us not to use corn starch to thicken, but rather to use pectin. We'd also have to process the jars in a boiling water for several minutes. I know the UK has some different guidelines/processes, it's interesting to see how people do things differently.
