If you want it to cool down faster sit the pot in ice water bath and keep stirring the pot to help it cool faster so you can put it away. It will also cool faster if you divide the huge pot into smaller containers.
With your Sweet & Sour Sausage, mu husband makes something very similar. He adds sliced onions and green/red/yellow/orange (any that you have really) bell peppers. Its really good.
