Okay, Tina, I finally have to comment. Want to thank you SO much for your videos. You are so real, your kitchen looks like mine, your hair is sometimes a mess like mine, and your cooking and nutritional information is so genuine and so practical. I’m watching every one of your videos. Thank you for the information about the potatoes. I’m going to IP some today so that I can squish them up and put them in the air fryer for lunch tomorrow, with some frozen vegetables. Then, later today I’m going to make some turmeric tea. Thank you so much for that one. I think almost everyone in my family is suffering from inflammation and needs this. I think I can talk my husband into it. I’ve been vegan longer, about eight years, but have become ill and don’t eat right anymore since cooking is harder now. Still vegan, but too much processed food. I’m going to take the simple route and do it the way you do, dammit. Thank you, thank you!

About how long can you keep them refrigerated before they start to grow bacteria on the inside? I only ask because they're being steamed and retain some moisture. They look amazing though! I want to start batch cooking them this way instead of just baking them 🙂

I just got an Instant Pot so your video was useful to me. I used to cook potatoes in my ancient Presto stovetop PC, and I found that you can add extra flavor to them by adding a few baby carrots, half an onion and maybe even a wedge of cabbage. I would cut the potatoes (usually the red ones) in half to allow the flavor of the other vegetables to penetrate. Also, I didn't use the rack or trivet in the cooker. The potatoes were especially flavorful when eaten cold or at room temp. I'm going to try this technique in my new IP.

What size is your IP, Tina? I am so on the fence with buying an IP…. I actually bought one at Costco, but returned it when I saw the insert was not stainless steel (as an IP is). I'm a big crock pot fan. Still thinking about getting an IP though ~
