Deglaze that pan!
If you do the meat in the pot, you create a fond, then you can remove the meat and use that same pot to make your sauce, deglazing if desired and that way you have a one pot, pot roast instead of 2 dirty pans. Just a thought

When you took the foil off, there appeared to be some grease floating on top of the tomato sauce. I sincerely hope you skimmed off the excess grease.
