Hi mate, l am not dissing you, but when you turn your meat over never pierce it with a fork, try using a cupel of spatulas in stead, that way you will not loose any of the juice into your skillet

Wow how good this looks…fyi when cutting up your celery don't discard the top of the stalk with the leaves. That's the best part of the celery. Pro Tip for you. I'm taking my roast out the freezer now to defrost and make this Amazing Dish.
