My grandma used a similar recipe and technique with a beef bottom of the round roast. Thank you Charlie for a well done video. Y’all heal up quick down there in New Orleans. My wife Nancy and I miss your city and the people and of course the best cuisine in the USA!

Okay, I finished cooking this roast at 11:30 a.m. today. I couldn't wait for it to rest before I pinched a piece off. It is sooo good! While, I didn't have a food processor, I improvised and used my spice grinder. Every time I look at your videos, I become inspired to try it. Thank you for what you do! Many blessings, Chef Andrews!

Happy Easter, Charlie. We love you and your channel and you're recipes. I never knew a pork butt could be so fancy. Here in Texas we use that cut to make tamales.

Omg. So my dad was from Southwest Louisiana and he was a great cook. He would stuff his pork roast with garlic and it came out pretty darn good. But, after watching this video I am going to have to go out and get a pork roast just to try it. (As well as a roasting pan with the V grill). This looks SO amazing. Since I am home due to the recent craziness, this coming week should be a good week to try this. Thank You, Charlie.

@12:48 "It's really, really good . . . ." No kidding! (How can you eat in front of us like that? You have no shame, man!)
Serve that up with some green beans smothered with bacon and some black eyed peas and sausage . . . . Now that's eatin' good!

That looks so good Charlie!! I'm doing a pork roast for Easter for my little quarantined family, and I'm going to use your recipe from start to finish. My pork roast is a little bit smaller than yours, but I know what to do! Thanks for the wonderful recipe. 😊
