    Ms Stokes, the liquid in the Instantpot will not run up onto the meat. It is there simply to provide the source for the steam unlike cooking with a slowcooker so don't worry about putting something to shield the meat. I plan to use your technique of coating my porkloin with the dried french onion soup mix, but will use the left over mix to put into a sip lock bag and a splash of extra virgin olive oil then dump in some chunks of potatoes. Close the bag and roll the contents around to coat the potatoes with the mixture of olive oil and soup mix. Then, pour it out onto a flat cooking sheet; then roast those potatoes. They are great tasting and would go good with the pork. I don't track the time, just test the potatoes with a fork and pull them out when tender. You cooked the loin for 30 minutes which will be plenty of time for the roasted potatoes to be ready. May you and yours have a Blessed Day. God loves you.

I am wondering why you put the roast up on a rack rather than just cooking in the bottom of the IP? And, why do you not wash the meat before cooking?     You can brown your meats in the IP I do put it on saute and brown away..all you would have to use is the rack to put that meat on and the IP makes awesome mashed potatoes, and awesome meat loaf I put potatoes on the bottom and my meatloaf in a round aluminum pan on top

I'm trying to get some ideas on how to do it, and what to add to it, because I am low-carbing, so no yummy potatoes for me, LOL. Just wondering, why do you NOT wash the pork off? Pork is the one meat I consistently wash/rinse off. Just curious as to why you don't? I need to get a Pyrex dish to fit my IP like you have. Have you ever tried the "cake" option? I am dying to prove to my husband that you CAN bake a cake in what he calls a 'glorified pressure cooker"! Thanks for your video. This was helpful–I had forgotten about using onion soup mix.

    One thing you could try to use to keep your meat up is squashed up balls of aluminum foil. I do that when I'm making a chicken in the crock pot, so I bet it would work in the instant pot too. I've also used stalks of celery and carrots as a rack for a roast in the oven, but they would probably cook down too much to keep the roast out of the juice. Dinner looks delicious!
