    Isn't it better after soaking in hot water to give them a quick rinse also in cold water or even ice water to stop the cooking process and prevent them from their sticking?

    Pork fat is the best tasting for sure. That's why we add it to our greens and green beans (and beans and peas) in southern cooking. It's so yummy. I didn't know you made it that way!

    Lard gives the food more flavor. When I used to eat pork I used lard to cook with.
    I use tiger balm for my aches at night. You probably get meds from Dr. I don't know if you can use them often though. Tiger balm is hot I only use one jar a month and use it every day. Red tiger balm

    I'm surprised at the noodles. While I'm sure you are right as I trust your knowledge, there was once a small Chinese restaurant in my town run by an Asian family for decades that served Chow Fun. But the noodles were 3/4 of an inch wide. The old long-time waitress said that they went to San Francisco (just an hour away) once a week to get the noodles so it wasn't like someone got the recipe from Rachael Ray. Could this be a regional thing? Does anyone have any knowledge about what the situation is here?
