    As a mexican who cooks, I think you should've stir the fresh corn first, because it takes longer to cook and then ad the onion and poblano strips. Another thing for your viewers, to roast the poblano chilies, you have to turn them around, you don't want to carbonize, but char the skin, that's why you have to keep turning'em, until the whole pepper is burned, then put it in a plastic bag (the same plastic bag you carried them from the market to your house) let them sweat and then clean the charred skin.

    I have poblanos that need to be used and am going to make it with chicken and pasta. I don’t have crema but I’ll use cream cheese and 1/2 and 1/2. Thank you for a great recipe 🤗
