I love Kathy and have books. Several of her recipes are my go to lunches for work.
Chef AJ, my son is going to graduate high school this year. He likes to cook and I have been looking at the possibility of a culinary school for him. However, I am not having any luck finding one that will not require him to cook with meat, dairy, eggs, sugar and oil. Do you have any recommendations? Maybe someone you interviewed at a school, etc. Thanks so much!

First off, Chef AJ, how is Bailey? I wish her well. Kathy and her husband are really quite incredible; you are so right, Chef AJ, when you suggest others who claim this diet is just too hard because of cooking, expense, etc., just suggest they watch this video and if Kathy can do it all out of an RV, my guess is others can do it from the luxury of their kitchens, no matter how small. I do admire Kathy's spirit and energy; she's, well, simply put, nice and subsequently a breath of fresh air. I have enjoyed her appearances on the Live, keeping us up to date on her amazing travels. This was a delightful interview after a somewhat stressful night in the state of Florida. I am grateful for a lot today and this includes you, Chef AJ, and Kathy, for sharing your gifts with us.
