I am making it but I added which I had in the fridge some cauliflower florets and I like spicy so I actually put Chipotle in Adobo sauce peppers in it.
I just want to say to you thank you so much for sharing recipes as I know there are many vegan websites that just show you making the meal but never gives you the ingredients as they want you to buy their books. One in particular is a mother and a grandmother duo They never ever share the recipes you have to buy the book. I myself I'm not in a financial situation for me to do that so I depend on gracious people like you who share. I've been vegan for over 25 years. ❣️

Sounds perfect for the InstantPot. The first part would use the saute function, the rest would be cooked at high pressure for 15 minutes. I've done many similar recipes, all containing one grain and one or more uncooked legumes. The only caution is to put the tomato products on top to avoid BURN. The grain can be brown rice, barley, or wild rice mix. If using lentils or split peas, no soaking is required. Beans should be soaked overnight if included.

It looks good but please don't leave out the celery. Omitting one member of the trinity is practically sacrilegious and you're missing the bitterness and umami it brings.
