    Ken, nice budget meal, this dish is huge in Hawaii, & in rural Kentucky you'd be hard pressed to find a household that did not have canned meats, spam, potted meat, vienna sausages,etc… in the pantry, is a staple for all types of dishes, spam was created for our soldiers in WW2, and for folks here due to meat rations, Hawaii is # 1 & Kentucky here is # 2 for spam consumption, protein

    Definitely trying this dish. Thank you Ken. The price of food is going through the roof. We have had terrible floods here in Australia and the farmers crops were washed away. So much misery for so many people. I like Spam and have all the ingredients for this dish. Cheers.๐Ÿ˜Š๐Ÿ˜Š

    Great recipe idea! I encourage everyone to be mindful of sodium intake with canned goods, especially SPAM, and sauces like soy. SPAM can be soaked for 10 minutes to lessen the sodium going in the pot, and sauces can really deliver a sodium punch that might surprise you. Blood pressure is a thing, and our pivot to cans and premade sauces takes care when consuming over the long term.

    Being a lifelong Minnesotan, the home of Spam, I have always loved it. In more recent years, I've preferred the lower sodium one. I currently have a bunch of cans on hand, bought before the grocery prices really went off the rails. I look forward to trying this! I have an 8-qt Instant Pot, so, I'll have to do some math.     Buying chicken breast on special in family pack sizes then freezing individual portions. I use more brown rice, oatmeal and whole wheat flour than ever before, buy what's on sale and avoid pricier food items that aren't necessary such as tree nuts, red meat, seafood or gourmet type of cheeses.

    Did you know SPAM is hugely popular in Hawaii? It first arrived there to feed GI stationed there during WWII, and the locals adopted it into their culture and have enjoyed it ever since! I guess combining it with pineapple is a natural pairing, Ken! ๐Ÿ™‚

    Looks like a good meal; however, isnโ€™t there a way to cook it on the stove? With all the heat up and cool down of the pressure cooker, are you really saving that much time? Maybe 5-10 minutes?

    No Spam handy but I do have leftover Easter ham. Making this today-thank you so much. DH is not fond of peas so I will just add them to my portion. I think the idea of sweet & sour sauce is good and maybe topped with sliced green onion.
