I just know they will be a new favorite recipe. One question: some videos steam the dumplings, you say drop in boiling water. Any difference on taste/texture? Just curious.

Looks great! I heard a technique where once the water boils add the dumplings, then you put in cold water, let it boil again, and dump cold water again, then take them out on the third boil. Do you know why people would use this technique?
