As a Greek I will commend you saying gyros right, but tzatziki would most correctly be pronounced as jajiki. It has that j sound.
Also as someone already said in the comments grating the cucumber and removing its water is what we do here.
Now I have to say while those pitas are beautiful… They are not what you will find being used here. Ours are flatter and bigger. I don't know how they compare to the taste of what you made, but I have noticed you like doing things traditionally so I wanted to comment on it.

As a Greek I am telling that this is a grate video. also what we usually do is that before we ad the cucumber in the yoghurt we drain it with a cloth . That water from the cucumber is "killing" the tzatziki

The gyros was top-notch, but for the greek standards, the pita was a bit to thick. Greek pita is something between this made in the video and flatbread. The confusion comes from the fact that internationally when you say pita, it's usually with pockets, while in Greece we even pinch the pita with the fork as it's baking, to AVOID pockets and flatten it out even more. That been said, great video as always.

You do not eat Gyros or Shawarma that way. Anywhere. Ever. You made middle eastern Pita. You put the Shawarma INSIDE THE PITA. It's not a freaking taco. If you want to make Greek gyros you make flatbread and roll it. WTF is that abomination. It's the equivalent of making a burger bun and then spreading the top with mayo and putting the burger on it.
