100% yummy Joe, I always get a fork and run the along length the cucumber just before cutting it brakes the skin a little which I like better.
BTW I like the new photography of your posts.

Hi, Joe !
I make it the same way but different pastas and different dressing throughout the summer so people don't get tired of it.
One thing though I never cover the pasta once the water is boiling, I learned from my Sicilian grandmother who by the way thought me everything about cooking. I was an only child so I had no choice. 😆
