    I make a lot of soup because I have allergies and can control what goes in the soup. When I make a soup with pasta, I always cook the pasta separately. I add some pasta to my bowl then put the soup on top and mix. I find the pasta absorbs too much and gets too mushy if I cook it in the pot.

    Question for anyone, since I am a low-FODMAP diet person. Is it possible to leave out the beans in here and add additional veggies in place of them or perhaps more pasta in place of the beans? I'm curious to know what some other people think. Thanks.

    Made this for dinner. I used vegetarian ground beef and beef less broth. My family love it. Funnily enough I didn’t have any small pasta so I broke up bucatini. (Discovered it’s the pasta in beefaroni). Very filling. I honestly don’t think I’ll ever be able to eat minestrone again!
    Biggest surprise is that I usually dislike pasta and beans together but something about this they had this amazing mouth feel. I think that is why it is so addicting. I didn’t add the sugar. The canned tomatoes I used already had sugar in them.
