    I did the chicken. It was perfectly crispy. Just so messy compared to when you made it. Guess I’ll have to practice more. Lol. I pay dried the chicken but the batter slid off easily.

    I love to make a big batch of meatballs for the freezer. I cook half of them & leave half uncooked. I use them for lots of things. The other night I made meatball subs & defrosted extra. Tonight I made a beautiful mushroom risotto and stuffed the extra meatballs with that and a salad. My grandparents were from Italy, so Italian food is my "specialty," but on the menu next week is your cabbage lasagna!

    You should add a little water to your meatball, because grinding meat diminishes moisture.
    About 1/4 cup per pound of ground beef, or an extra egg. I also add two tablespoons of parmesian cheese, salt and pepper. tmspoet Ohio

    Aldi has hams on sale this week so I am buying two for the freezer and the neighborhood grocery has ground chuck for 2.99 lb. Buying some of that for meatballs for the freezer. We ate out of the freezers and pantry this month and doing it in April too because I have to pay over 700$ for having two of my sons teeth removed.
