I throw veggies into my air fryer every single day. Right now, I'm addicted to carrots with quartered onions. Have you ever looked up the nutrition of carrots and onions??? Shockingly nutritious stuff! And it's disproportionately satiating, relative to its caloric density. It's only about 200 calories per pound, after being roasted, and you get to eat LITERALLY as much as you can, and it is IMPOSSIBLE to gain weight from it. I ate 7 pounds of carrots and onions today, and that's a scant 1400 calories! It's weird, that particular combo, satisfies like a starch and is absolutely great as a standalone meal.

Throw some beans and steamed collards into that, and you are good to go!

Where is the baby? Would love to see him. I have a metal mason jar funnel that was my Mother's. She home canned everything when I was a kid. We picked the fruit or veggies and she canned. She always knew where to find places to pick fruit or veggies for way cheaper. The metal funnel is bent up a bit for being so old.

I have lots of mason jars in my freezer. There’s just two things you need to be careful about. Always use widemouth jars and don’t fill them all the way to the top. I also let hot foods cool completely before I put it in the freezer.

This is probably not much of a hack lol but whenever I want pasta I usually make it because I’m short on time or I don’t have anything prepped beforehand. Before I put the pan on the stove, I run the sink for a few seconds until the water is scalding hot, fill the pan, and then put the pan on the stove. It greatly reduces the amount of time that you wait for the water to boil before putting the pasta in. In the past I would just run the faucet and put the pan right under it. But now that trick saves me time lol even if it’s only like three minutes 😂

Reebs, how are you looking so good so quick. I looked like a sleep deprived zombie for the first entire month! Is this another good side-effect of a WFPB diet? Wouldn’t surprise me if it is!
