    Still waiting for your grilling outside. Looks like a great dish. Prep always comes first. I would bet, that dish would taste better, if that chicken was cooked grilled over apple wood. Just a suggestion. I grew up smoking lots of meats. Campfire. But I have better equipment now. Is smoking meat taught to chefs? Not as a one off dish, you can do other ways. Without fire. I am talking real wood, over an actual fire. Have you ever made jerky? More a snack or survival dish. But people pay me for doing it. Personally. You should try doing it. Lots of variation, and textures. I would like to see chefs, learn that skill. Look at sales for jerky. A massive industry. For decades. Just saying. Never seen a pro chef, just make jerky. Technically, a dish.

    Chef, I think you’re the best. I remember learning from you in the 90’s. Maybe 2000’s. My hands don’t work much anymore. I have a hard time standing up for very long. I worked hardcore construction all my life. I don’t have good knives. Heck, I don’t have any knives. I found an old knife in a cabinet in my garage back a couple months ago. It’s a steel parring knife. I use it because I can make it sharp regularly. But it hurts my hands so much to cut anything hard or big. I love to cook. I do it regular like. I take care of a guy who served in the army in Berlin in the 70’s. He’s 8 years older than me. He would be living in the woods if I didn’t. It’s not easy. I can’t save them all. But you help me.
