    No joke, I make this every single week. My girlfriend sometimes wants to tear her hair out because I want to make it so often. It is absolutely a mainstay in our meal rotation as it is extremely simple, doesn't take long, tastes pretty good, has a lot of leeway for experimentation, and is just generally pretty darn healthy. It's hard out there to find vegan/vegetarian recipes that don't call for a bunch of weird ingredients so lock this one down!

    Some extra tips:
    Use Chipotle Tabasco
    Use a whole can of corn drained
    eat with tostadas or tortilla chips
    sour cream too

    I make this once or twice a week, it makes two good portions for one person, If you have no jalapeno just use red pepper flakes to sub. Great with avocado I cut it as neede and add separate this dish tastes better the second day! Pro tip – triple the amount of garlic here it will still be subtle.

    I made this and it came out great. Instead of fire roasted tomatoes I used salsa from a jar which turned out good. They use 16 oz so for the salsa I used about 10oz and just add more in if needed to taste. Didn’t have avocado so didn’t do that part. But came out great with awesome flavor. I also sautéed with 3 cloves of garlic instead of the two listed in receipe. Never liked quinoa until now! My Uber picky husband even liked it. Success! Also I ate it as a burrito with this as the filling and just added cheese and it was really good! Next time will add avocado or guacamole as well
