Hey Chef Jeff, that is a great looking roast and like you I use my insta pot so much anymore and love the results as well as how fast I get done cooking. I make my port roast this way except sometimes I use turnip roots instead of little taters and so very good. I use the greens as a side and cornbread. Love and blessings to you and Mom.
