    Kirby, I like making smash burgers, simply because it’s easier to divi up the meat, rather than make patties. The hot and humid Louisiana weather is cooling off now, so I’ll be back on the griddle soon.

    I grew up in Oklahoma and worked in two of the "famous" joints for these burgers. You pretty much hit it head-on, but both places I worked would place the sliced onions in a clean kitchen towel and twist it tight to remove most of the liquid from the onions prior to placing them on the grill.
    These burgers cook fast, and squeezing out the water helps onions caramelize during the short grill time.
