    Ingredients
    For the base:
    32 KitKat fingets
    350g crushed digestive biscuits
    160g butter, melted

    For the cheesecake layer:
    480ml double cream
    500g cream cheese
    120g icing sugar

    For the ganache:
    100g dark chocolate
    100ml double cream

    For decoration:
    6 crushed KitKat fingers

    1) Place the KitKat fingers vertically around the edge of a cake tin.

    2) For the base, mix together the crushed biscuits and melted butter until combined.

    3) Scoop the mix into the cake tin and press it down firmly.

    4) Put the cake tin in the fridge.

    5) For the cheesecake layer, whisk double cream to stiff peaks in a large bowl.

    6) In another bowl, whisk together the cream cheese and icing sugar until smooth.

    7) Fold the (now whipped) double cream into the cream cheese mix.

    8) Remove the cake tin from the fridge and scoop the mix onto your base, smoothing it out.

    9) Refrigerate again for 5 hours minimum.

    10) For the ganache add your dark chocolate to a measuring jug and pour the double cream over the top.

    11) Put the jug in the microwave , stirring every 30 seconds until melted and smooth.

    12) Pour the ganache over the top of the cheesecake and smooth it out.

    13) Top with a sprinkle of crushed KitKat fingers over the top.

    14) Refrigerate for 2 hours.

    15) Enjoy!
