    1) Line an 8" baking tin with baking paper.

    2) Finely crush 220g Lotus biscuits in a blender and set aside 2tbsp.

    3) Pour the rest of the crushed biscuits into a bowl and mix with 60g melted unsalted butter until combined.

    4) Pour the mix into your baking tin and press it down firmly, then put it in the fridge.

    5) In a large bowl whisk together 600g room temperature cream cheese and 100g icing sugar until combined.

    6) Separate the mixture evenly into 2 bowls.

    7) Add 50g Nutella to one of the bowls and whisk until combined.

    8) Add 50g Biscoff spread to the other bowl and whisk until combined.

    9) Spoon the Nutella mix onto your base and smooth it out, then repeat with the biscoff mix.

    10) In a large bowl, whisk 250ml double cream to soft peaks.

    11) Spoon the (now whipped) cream onto the top of your cheesecake and smooth it out.

    12) Sprinkle the 2tbsp of Biscoff crumbs over the top.

    13) Refrigerate for 3 hours minimum.

    14) Enjoy!
