    Only advice I feel would be helpful is when using types of gloves in cooking prep is, yes it sounds weird put taste them. If they have a strong/bad taste it can mess up the flavor of what you are cooking. Hope this helps. You’re doing great!

    Great job! Looks really good! Side note….. when I bought my flat top oven, I was told not to use cast iron on the stove because it can damage it. It’s so heavy and it can also scratch it.

    Smashing first episode Atlanta!!! Well done. I'm from PA; never tried a Cuban sandwich before. Not sure why exactly, as I like all the separate ingredients (pickles & Swiss cheese especially – right there with you Denz). I've seen Cubans on many a menu here, but I'm betting Florida takes special pride in serving "the best". Loved how you "taste tested" that first slice of pork 🙂 The minute you laid the tongs down after cutting it, I knew you were going to! Chef's privilege, right? 😉

    The Cuban Sandwich although may be more available in Tampa Florida is a common staple at Deli Shops across the United States as will as some Franchise Restaurants and Diners.

    I've never wanted a Cubano so much in my life and it's only 8am here. Kansas does not have an official state food, but if you ask anyone about a food that is fairly unique to us it would be bierrocks. I would also recommend the delicious pairing of a big bowl of chili with a cinnamon roll on the side. It's a very sentimental dish to many of us kids from the 70's and 80's that grew up in the Midwest.

    I am a Tampa variation lover of the Cuban sandwich. Being from Florida, I have tasted all 3 versions. I love mine as the Tampa version having Salami, with the Key West fixings of lettuce, tomato, and mayo on it though. Around here in the Tampa area, you can order Deviled Crabs with your sandwich. This is a great lunch time meal here in West Central Florida. I also like to get my sandwiches with thinly sliced onions on it too. You did a great job Atlanta! 😀

    When you take on Texas, please, consider the five different regions of BBQ, because soils differ from the Llaño Escatado and Big Thicket, and from the Coast, through the Hill Country towards the High Plains which streatch to the Canadian tundra. Each region has it's own spices.
    Also, I've noticed three different BBQ in the Carolinas, and when I was in Atlanta, it was like every place had their own recipe from savory to salty to spicy. I 💕 BBQ and pulled pork.

    Amazing job, Atlanta! Cuban sandwiches are enjoyed all over our country. Never knew they weren't originated in Cuba. But my New Zealand family taught me something I never knew about the USA. Rock out the other 49. Good luck with Ohio! (Where I'm from! 😉)

    Being from Texas, and having used cast iron all my life, that's a well seasoned cast iron skillet. One tip: leave the meat in one place until you're ready to turn it so it gets a good, solid sear 🙂 Congrats on your first episode!!!

    You did really good with the cuban sandwich. My husband family is from Ybor city in Tampa Florida that's where alot of Cuban American lived in the 20's and 30's. St. Augustine, FL is the oldest city in America and that's where Ponce De Leon settled.

    I would suggest next time use a pork loin( or part of one) roast it then thinly slice it, your pork will be more tender because of the grain of the meat. Such a good job! I look forward to seeing more!!!
