    Wendy’s Tollhouse Chocolate Chip Cookies & Double Chocolate Chip Cookies – Keto Style

    Pre-heat oven 375 Degrees F

    Ingredients:

    1 cup butter, softened

    ΒΎ cup granulated monk Fruit a & Erythritol blend (or your favorite sugar substitute)

    ΒΎ Cup Brown Sugar (Besti Brand)

    1 tsp vanilla

    2 eggs, room temperature

    1 tsp baking soda

    1/2 tsp salt

    1/2 tsp xanthan gum

    2 cups Wendy’s Protein Power Flour

    1/4 cup semi-sweet chocolate chips

    Directions:

    In a separate bowl, add in baking soda, salt, xanthan gum and protein power flour and stir together well

    In the mixing bowl, add butter, granulated sugar, brown sugar and vanilla together and blend on high until light and creamy

    Add in one egg then beat well then add the 2nd egg and beat until well blended

    Add in the dry ingredients a few spoons full at a time then beat then add a few more then beat until well incorporated.

    Add in the chocolate chips and hand mix into the batter until evenly distributed

    Use silicon mats or non-stick cookie sheets

    Use a 1 to 1 &1/2-inch ice cream scoop and drop on to the mat in even rows. Should leave a little room on both sides as they spread out as they cook

    Cook at 375 degrees for 9 to 11 minutes or until done.

    Remove the cookie sheets from the oven and set on the counter. Allow to rest until room temperature on the cookie sheets. Do not try to remove the cookies from the pan until they have rested for about 30 to 40 minutes and cool to room temperature completely.

    Carefully move them onto a baking rack to firm up for another hour or so the longer you let them sit out on the rack the more the texture sets in and they firm up a bit and become more chewy too.

    Optional: Split the dough in half and make Double Chocolate Chip Cookies at the same time

    Split the dough in half and put into two separate bowls before you add in the chocolate chips

    Set aside the half Toll House Cookie dough and add in the semi-chocolate chips by hand until they are evenly distributed

    Double Chocolate Chip Cookies (optional)

    Ingredients:

    The other half of the cookie dough

    2 tbsp black cocoa powder

    1/4 tsp cinnamon

    10 drops French Vanilla Stevia or other liquid sweetener

    ΒΌ cup of White Chocolate Chips (optional semi-chocolate, milk chocolate, butterscotch, or peanut butter Chips)

    Directions:

    In the bowl with half the cookie dough

    Add the black cocoa powder and cinnamon to the batter and beat until well incorporated

    Fold in the white chocolate chips into the batter and hand mix into the batter until evenly distributed

    Use silicon mats or non-stick cookie sheets

    Recipe looks great. I watches the video and there seems to be some differences in your Recipe than what you showed in your video. Baking powder was used, not baking soda, and your video said 1/8 teaspoon xanthan gum, not 1/2 teaspoon. Which version do you recommend?

    This is a Big Break though idea for Keto cookies for me. I had to stop making keto cookies, too many carbs when using nut flours. Plus living alone all the cookies were mine to eat !!!lol Never was good with willpower over cookies, too easy to go back for 2nd, 3rds ….. on & on πŸ™

    So for those of us who have trouble getting the egg white powder. Can we make a loaf cake with liquid egg whites, cut it up and dehydrate it AND then use that powder to make a recipe of PSMF bread that uses the recipe for egg white powder?

    I actually started make the bread in to a flour 3 month ago I freeze dried though. Didn't realize how versatile it actually is. I was using it as bread crumb. Now I have to try it is new things.

    I tried cutting the recipe in half. Got a crumbly dough. Had to just pat it out into one big cookie on the cookie sheet. Taste is good except for the erythritol cooling effect from the Lakanto blend and the Swerve Golden Brown sugar substitutes. Thank you for the recipe, I will try again soon.

I dried out some bread (next time ill make with Biscotte flavours and little more sweetener) And then made a sauce with Lilys choc chips, heavy cream & walden's farm caramel sauce mixed together to dip in…..OMG it was like chocolate dipped biscotte biscuits.
