    it looks great…. but why didn't you add boiled pasta to the sauce instead of pasta in a clean pot, and then adding the sauce into it =2 dirty pots + wasting a bit of sauce left behind the wall of the pot…!!?

    I called the Star Anise from the beginning of the Ragu! Those mushrooms made me so happy on the Miso Mushroom Gnocchi! I would do mushrooms before butter, check it out, mushroom first in the bare pan and their own juices make them wilt without taking on too much butter, then add the butter. I just learned that not too long ago from the interwebs!

    You can save the mushroom stems in the freezer and use them when making stock for sauces or soups they add great flavour. The soaking water from the mushrooms is also good for that just strain it first sometimes it contains small bits of sand.
