I am on this Mexican Food kick and just had to put this Mexican Cornbread Casserole together and give it a try. Gosh it was easy and so so good. You have to try …
Sew, you said sew, this is not "macksican" cooking.
Thank you for sharing this recipe, looks yummy.
I’ve been cooking a Mexican casserole similar to yours for years But I’m going to try your recipe. It has more spicy ingredients! I’m cooking it this evening!
OMG this look Goooooooooooodddddddd! Yum Yum
Nice! I would put the entire can or jar of jalapenos in there with another packet of seasoning. Thanks for the recipe.
Looks so good.
Yum! Looks amazing. Can I ask why a red onion?
You can use enchilada sauce instead of the boulion
and tomato sauce and taco seasoning. It saves money and time and gives it an incredible flavor.. sprinkle a couple T of corn meal in the meat mixture and mix if you want it to thicken as it Cooks and it gives it a great savory sweet flavor. Can I come to your house for dinner? You made me hungry..looks delicious!
smacks can against pot every time you put something in
I would love to try this but only two of us in the house. Halving this a problem?
Extremely high sodium recipe,,,watch out for BP.
those wa bv those
Any time anyone uses bottled peppers with vinegar you have completely changed the flavor. Always use chopped natural ingredients . Shame on you.
Swoon….
Made this today. Couldn't do jalapeno and didn't put cheese on the cornbread but everyone liked it a lot. Thanks.
don't use Jiffy it has sugar in it yuck !
Definitely making this, using NSA or LS ingredients. Maybe some guac and sour cream on the side 😉Thank you Debbie 💜
Now this is a hearty meal
Looks good I want to try it but please don't call this Mexican food there is nothing Mexican about it
Tried it tonight and it's delicious. I will probably save the water next time, but no complaints. Thank you.
Why would anyone "dislike" this video? Some people just gotta be assholes…LOL
I have a salt shaker just like that…had it for years. LOL…I think I got it at the Dollar Store.
Thx 4 the video 👍
I will try this💝😋🍽️
My hubby is on a cornbread kick lately so I think this is what we’ll be having for dinner tomorrow. Seems like a versatile recipe where you can add things you like and omit the things you don't. I usually make cornbread from scratch but if I use Jiffy I always add a tablespoon of mayo to the mix before baking. Might sound gross but I promise you can't taste it. Keeps the cornbread from getting so dry. Thank you for sharing this recipe with all of us, it truly looks delicious! 👍🏼😄
Looks like a cool recipe, definitely believe it tastes as good as you say. But coming from a Mexican woman, I have never in my life seen any Mexican person cook something like this, this is 100% an American dish. There is just nothing mexican about it. But like I said, it looks delicious, but please, go try authentic Mexican food if there is any near you!
God bless!
If you add all those ingredients up, that was some pretty expensive cooking. That's okay I like wealthy women.
I'm going to try this ,thanks for sharing 👍🙂 It's the right season for it. Bye
Thank you for your Mexican cornbread recipe. Barely can hear you talkin. Lot of grinding in your video. And music too loud. Not trying to be rude. But I just thought you would like to know. Have a wonderful day.
Thanks for this idea, Im gonna make it tommorow

Just a note that some people might find helpful for breaking up ground beef really fine if you dont wanna buy that gadget … use a pastry cutter. I use mine all the time for that, works great. Just have to make sure you're just doing chopping motions straight down, so that you're not scraping the bottom of your pan.
Looks great!
How you cooking with a paper towel,on the fire?
Yum yum yum! Greetings from Illinois!
Debbie foodprepping please take a few minutes and google every single ingredient that went into this dish. Not per serving but the whole like 2 lbs. hamburger total has 775 mg sodium. 2x (corrected to one pouch) 1 oz OLD El Paso Taco seasoning mix (loaded with MSG= should be banned!!) 2072 mg sodium each CORRECTED FROM 2 PACKS TO 1; onion about 2 mg; frozen corn see label maybe less than 10 mg. Depends on brand and style. YEAH!
LEARN TO READ YOUR LABELS! Watch out for per serving amounts as these need to be multiplied to the total used for your recipe. GV Black beans 1720, tomato sauce 3280 mg; Jiffy corn muffin mix 2 X 2147 mg = 4294 mg sodium; milk 60 mg sodium; egg 54 mg; and green chiles 508 mg sodium,
That's to get you started. SEE what I left out as I couldn't access the video or recipe at the same time I did these calculations.
So far 12,769 mg sodium!!!!!
Oh my gosh! There's diced tomatoes (see can total) approximately 250 mg, Knorr bouillon 870 mg X3 tsp = 2610, jalapenos 300 mg… sub-total 15,929.
And cheese to add yet… 720 mg sodium. Maybe you should just get a salt lick.
This dish is 16,649 mg sodium. Then if you serve 6, this dish has a whopping 2775 mg per serving!! You've exceeded the recommended 1500 to 2300 mg per DAY. So eat NO more sodium for the day. While these figures may not be perfect to what brand you used or manual error, I took the time to calculate the best I can to show you what your promoting, serving and doing to yourself. For educating ourselves back to health.
BEWARE: This stuff will destroy your health as you said you've lost your strength! and your loved ones that you serve MSG and ultra high sodium content food. Never get so interested in feeling that you forget to think. Eat real food.
I have made this before except i added a can of rotel instead of chilies and shredded cheese into the cornbread mixture. Sooo good!
Looks really good! I'm going to make this for sure!
Walmart sells it too.
Funny how we Mexicans never eat this kinda of food, and have no idea how to make it,but I'll be nice to learn and try your version of Mexican food. Been here half of my life and have always heard of casseroles,my Caucasian friend tells me that they're good but I've never make one. Thanks,it looks pretty good.
You got me ready to try it your way. I will twek a little but for the most, I like your style. I like to see the cornbread completely/fully spread over top, corner to corner. Thanks for sharing
That looks yummy and I am going to make it. But your black beans were not raised.
I bought one of those at Wal-Mart
It's so good 👍
Looks good. Knorr makes a beef bouillon too, I'd rather use that (since we're using beef in the recipe rather than chicken). Also would use green chillies instead of jalapenos in the taco mixture, or omit the jalapenos since you're already using green chillies in the cornbread: it has a different flavour which I prefer. Maybe add green scallions into the cornbread, instead of green chillies. I've never heard of Jiffy cornbread muffin mix, it must be an American thing. You should never put hot food into plastic containers — they can leech chemicals into your food. Glad you didn't. Thanks for posting your recipe!
