    Locals in Chicago don’t eat deep dish pizza unless they have family and friends from out of town visit. Otherwise, you see locals eating tavern-style or Detroit style pizza.

    For those worried about the grease… here’s an easy fix. Don’t break up the meat right away. Take it all out first and set in a bowl or container, then pour the juices into a container and put in the fridge for a few hours or overnight. The grease will settle on top and create a disk that you can take out leaving only the actual gravy underneath. Then you simply tear up the meat and and add it back to the gravy. Neat trick to use for braised shorts ribs also.

    I watched and then made this yesterday. It turned out excellent. Tip: before you close the Insta Pot lid, place the included metal trivet on top of the meat chunks, then place washed, foil-wrapped potatoes on top. Cook the same as Sam says. Now you have the meat and baked potatoes in the same pot, same cook time.

    I enjoy your channel, never miss an episode. I have tried many of your meal ideas, with my own twist and have had great success. Whether it’s cooking for my girlfriend or a house full of children and grandchildren they love the creative ideas.

    Have you ever thought of doing a show with a co host. Maybe a local restaurant owner who has there own unique menu. Perhaps you could each prepare something to compliments each others creations. My thought is you have a large local following and this would be a great way to support local small business. I hope you give this some consideration.

    Thank you, Sam, for some great recipes. I don't have a pressure cooker so this is what I did with this…

    Beef tenderloin for the meat seared in my ci pan…when done, put in my crock pot
    Still in my ci pan I did the oil and garlic then put that in the crock
    Did 2 cups beef broth made with the cubes and half a cup of water and all tge seasonings you said (didn't have smoked paprika so used regular)
    Cooked on high forc4 hours
    We toasted up hamburger buns (what we had on hand) and used shredded cheddar cheese.
    Sorry no pics but damn it was good.

    Sam, I grew up outside Chicago and I can understand and forgive many things. Shredded beef- fine, mass produced gardiniera- quality stuff, your sons hatred of deep dish pizza- He’s wrong but to each their own. But putting a quality Italian beef on a crunchy French roll is not acceptable. That role needs to be doughy and pillowy and should absorb so much au ju that it nearly disintegrates upon biting it. Fix it please I’m doing you and your fans a favor. Also melted mozzarella is next level

    Max… Chicago Deep Dish Pizzza is a marketing gimmick from a schmuck who wanted more people to come to his pizza joint. In reality it’s thin crust with sausage, pepperoni, green peppers and mozzarella cheese that’s melted to the point it stretches on forever. In Chicago we cut our slices into square slices. It’s time you get over it with your low hitting barbs about Chicago. Get out of your sheltered San Diego, grow some balls and come to Chicago. Try Chicago fast food in a proper Chicago Hotdog joint. And Sam you fucked up the ‘Beef. No crunchy bread and dip all that f’n beef.🤦‍♂️
