    Reminds me so much of living in Michoacan. On weekends and holidays, women would set up huge cooking pans and griddles in the Plaza and make this dish, known as pollo a la placero.Often with chicken hindquarter. Plaza chicken Yum

    This are enchiladas michoacanas and they are sold in the streets of most towns and you can stuff them with chicken, picadillo or shredded beef, but they are delicious with just Mexican cheese and onions, yum 😋

    You make very similar like my mom and my grandma who were from Sonora, Mexico. My grandma would only put queso seco and stack them up instead of folding them and garnish them with green onions. My mom would fold them and add cheese and white onions like you. 😋
