    Chicken broth
    Remaining rotisserie chicken (bits and bones
    2 bay leaves
    2 garlic cloves
    2 heaping TBSP chicken base or chicken bouillon
    *pressure cook for 45 minutes with a slow-release

    Ingredients
    2 cups of lentils (soak in room temperature water for 15 mins)
    1/2 Tbsp olive oil
    2 garlic cloves
    1 medium onion
    2 Anaheim peppers (or favorite green pepper such as poblano, hatch, or canned)
    3 tomatoes
    1/2 tsp ground cumin
    2 carrots
    2 zucchinis
    2 medium potatoes
    8 cups of chicken broth
    Small bunch of cilantro
    *adjust salt to taste

    Lentils are nostalgic because my mom always made them during lent. I have been making them like her but never thought of adding carrots and zucchini 😮. Adding these ingredients will make the soup heartier. I’m going to try adding them this week. Thank you!!! BTW I love your channel.
