Ok, where do you get white pepper? Seriously, I look every once in a while, but have never actually found it. I looked once at the Asian market that me and my grandpa used to shop at. I used to buy most of my meat there because I found it to be better quality and cheaper than buying meat at someplace like walmart.
I've never used fresh ginger. I don't know what to do with it. 😂 I usually try to keep ginger paste in my fridge for frying rice.

I am Cantonese, I believe the Cantonese style of flavoring allows for the entire family to adjust to each individual’s preference, for instance, not too salty for Grandma, and Jr. can always add more soy sauce, or Dude can add some Saracha sauce.

In Toronto, I have never seen Canadian bacon. Here you can only buy "peameal bacon" or "backbacon". Also, my dad always says that the cornmeal makes the meat "soft" so I am guessing that it tenderizes as well! Great stuff and keep up the good work

My knowledge of cooking is exactly like yours but then when I became really interested, I took several Chinese cooking classes. I remember how my instructor would always tell us to add a pinch of baking soda to our meats as they were sauteeing to trenderize them. I still do that, Chinese or not. Thank you for this. What happened to that cute asymmetric hairstyle you had. I miss it. Love all you do.
