Hey Mike and Theresa and Eric. My Son and his fiancé were up for a visit this
weekend. Hugs are few and far between….. hugs can't be replayed.😊
Very interesting interview and guest. A lot of great info covered!

Question…… When you were talking about tossing your CI into a fire it perked
my curiosity. That's pretty much what is done when cooking Bean Hole Beans.
A hole full of hot wood coals surrounding/covering the Dutch oven and buried
for 10-12 hours before being dug up again, still hot.
Exactly what they were made for, yet I interpreted what was said as, that's a
No No. It's been being done for Years in New England.
Any thoughts from You and Eric would be appreciated.
Thanks as always for sharing. Mark and Rosa
(ps. you lived till you've had a bowl of Bean Hole Beans😊)

When you try to restore the fire damaged pan, do 2-3 vinegar baths first- rinse and scrub in between. Then use evaporust! I'd do a 2 day bath, scrub, then repeat if needed..

I'm deeply sorry I had to be out of town. I caught a lot of this while driving home down Interstate 10. So I wasn't able to participate in the chat. I caught up on what I missed this morning. I love the Cast Iron Chaos channel. Eric seems to be one of the most polite and kindest people I've ever met or known about from the Boston area. My Christianity and Libertarianism might clash with his stance on religion and politics. Even so, I have the utmost respect for him and would love to meet him in person one day, I could probably talk vintage cast iron with him for hours, with neither one of us growing weary of the conversation.
Around the 35 minute mark the discussion turned to charcoal. Henry Ford and Kingsford invented the charcoal briquette, however lump charcoal is ancient. Lump charcoal is the second oldest cooking fuel known to mankind after wood. Jesus even cooked with charcoal see John 21:9.
Around the 1:16:00 mark you talked about a hog's head cheese mold. I was watching that this morning while consuming a bowl of grits with hog's head cheese. (Coincidence? I think…maybe?)
I haven't watched all of your interviews Mike, but I've seen a lot of them, many are very good and I enjoyed all that I have seen. I think Cast Iron Chaos is by far the best interview you have done, and my favorite guest so far on your show. This one is a keeper!
