I always have to stay to the end because hearing you say Mr Googlepants always makes me giggle.
I love pretty thick, Greek yogurt style yogurt. I also use my Instant Pot to make my yogurt. Once done, I usually strain a lot of the whey out. I’m still learning what to do with the whey. At this time, I pour it over my garden. I don’t have access to raw milk right now. I miss kefir.
Yogurt is on the to do list for this weekend. I’ve been binging your older fermenting videos. I was given a couple of small heads of cabbage and a lot of small beets(maybe 20?). I got a quart and pint of sauerkraut started and a pint of kvass. Fingers crossed I like it better than traditional canned sauerkraut. The only time I could eat that stuff was when I was prego. Maybe I missed it in one of the videos but what do you use the kvass for? My fermenting recipe booklet that came with my weights said salad dressings but that was it. I love beets so looking for different ways to use those 20 mini beets up. Enjoying watching your garden come to life. The been tunnel sounds awesome! It would also offer a nice shaded spot to cool off while gardening.

My instant pot doesn't have yogurt setting. What I've been doing is the "oven" method. I don't have any raw milk near me, but I buy 1/2-gallon whole milk to make mine. I did buy organic yogurt for the starter, but now I use my own yogurt as the starter. I warm it up to 180 degrees and then turn it off. I remove from the heat and let it cool down to 110 degrees. While it is cooling, I turn my oven on its lowest setting which is 170 degrees. Once it gets to 110, I add my yogurt/starter and mix well. I get 4-pint jars and fill them to the brim. I then turn oven light on and oven off. I do this at night before bed and it sits in the oven all night. Then in the morning when I wake up, I just put lids on them and put into the refrigerator. I make it every other week and make smoothies with it almost every morning. I use fruit and also spinach powder and other powders when I have them.

Just a quick note…. When I mix my yogurt and milk I put straight into the jars then put the jars in the crockpot on warm with warm water, cover with a thick towel and leave. Makes much easier clean up and you put already filled jars in fridge!
Anna you have quickly become my new favorite homesteader. I too recently moved from the PNW(Southern Oregon) and have landed in NW Arkansas. I miss all things homestead as we search for our new property. I do continue to can and container garden. I intend on upping my fermentation game. Keep those videos coming. 🤗
