    I must be half squirrel then. I may need an intervention for my canning obsession. I live alone and don't eat that much yet I have this urgency to can stuff. It's fun! I have food stacked in every corner of my 1 bedroom apt. Do I need counseling?

    I don’t typically put salt in the things I can because my son has to watch the salt intake. Do you think that the salt helped bring out more of the sweetness now that you’ve eaten them?

    Hello, i just joined your channel. What type of canner is that? I did my first canned anything last year, sweet picked beets and garlic dill pickles. Turned out pretty well. I just used a stock pot tho.

    I was just thinking… 'why isn't she wearing an Ove Glove or steel mesh glove with that slicer?' Then boom, you sliced your finger. As a Mosaic Artist, I've taken enough gauges and dings, and knicks to learn to always wear the right gloves for the right job. But, on the plus side, loved the slicer and ordered it through your site. Love that you get four different ones. Hope your knick heals quickly, like a sore thumb it'll be a pain until it does. I Will try canning some of my sweet potatoes this year, but they store so well I don't normally bother.

    I was given a box of white sweet potatoes this week. I think this weekend I want to try to can them!! I will do those, and maybe some white potatoes. I was given 2 5lb bags of them, and need to use 1 bag so… I have a brand new canner (the 1st one that's my own and not borrowed) and I have so much stuff I want to do but no idea where to start! LOL I think it maybe be potatoes!

    I tried canning sweet potatoes and they are really soft as the end result and didnt care fir them when tried candying them in the oven. The only way I will probably use them because of the mushiness is sweet potato pie. How did you do?

    OK you didn’t wipe the mouth down on jars. Your husband sharpen the knife and then wiped it on his pants. That’s not sanitary for canning. Hey you did not the bubble. Which is another important thing. These are not safe practices at all. You need to go back and study some more. Before you get somebody hurt or yourself

    Can you PLEASE post a video or tell me exactly how you "cure" your sweet potatoes without that high temp and humidity (details please) and how you also store your sweet potatoes (type of container, single layer, or layers with something in between, average temp and light they are stored in, etc.)…anything you can share in detail would be so helpful! You are the first person I've heard say they don't do the high temp and humidity method, and I'm in the same boat as you. Thank you!!!!!! I hope that your finger is healing well, that hurts so much 🙁

    Oh No!!! Is your finger okay? I’ve done that before and it literally took the tip off my finger and I immediately ran it in cold water and it began to burn soooo bad but I did mine with a mandolin because I wasn’t using the guard…note to self and anyone else reading…those finger guards are there for a reason!!! Use the finger guard when slicing with a mandolin!! I sure hope your finger heals well and is okay. I also noticed you mentioned making a stir fry for dinner and using leftover cabbage, just curious if you’ve heard of “crackslaw” it’s nothing like coleslaw, it’s a hot meal and you can make pretty much any meat with it and any kind of sauce you like, I typically make a Chinese teriyaki type flavour with Tamari sauce or coconut aminos instead of soya sauce and I add fresh minced garlic and water and some surkin gold which is a sugar free brown sugar substitute. Anyway do a search on google for crackslaw and you’ll get a ton of various recipes. You’ve probably already heard of it but I hadn’t and I couldn’t believe how incredible it tasted and easy and fast it was to make with ground beef or leftover chicken.

    Carbs are good for you, it’s what you put on them that’s bad! Our bodies want carbs as cold weather comes upon us to pacK on fat to help us survive freezing temperatures. It’s why so many gain weight during winter!

    Oh so sorry to hear about your finger. I bought some gloves for slicing and pealing to protect our hands on Amazon.
    Just been picking our pumpkins and winter squash- plus the last of the watermelon. Going to make more watermelon jam.

    Thank you for sharing the sweet potato canning… didn’t know that was a thing… we get the heat and humidity to store the sweet potatoes in our garage. I hope your finger heals quickly 😊 You are a trooper for pushing through!

    Pro-tip for curing sweet potatoes in colder climates. Place them in big plastic storage totes with a good lid and stick a heating pad or heat mat under them on low. I sprinkle about a 1/4 cup of water in there as well.
