    This is called olobo (олобо) in Kyrgyzstan, but they only add milk with churned yellow butter and sometimes salt. With the extra ingredients they use in Uzbekistan this sounds like it might be tasty. We don't use a carrot to stop up the long, though, we use the heart.

    Pretty sure they don't "throw the dough away". After washing the dough in milk, what's left is wheat gluten, great for cooking. The milk+wheat starch+onion+spices+oil filled lung is the most interesting food prep I've seen. Ingenious!
