I toast on the chili on the comal or in open flame for a few seconds to release some of those aromas before I boil. I alos prefer to add smoked garlic too. But nice to see your balance of chiles.

09/10/2023 – I made this today for my enchiladas. The sauce is so very good. Just a hint of burn that is perfect. I did use chicken bouillon with the chili water. Perfection. The sauce looks like silk in my pot. Very beautiful. Thank you to you and your beautiful mama for such a lovely and delicious recipe. ❤

I enjoy mild onion flavor but dislike biting into onions. I cut mine up and wrap in a thin cheesecloth so i can just pull it out
i make my chili sauce very similar and i can vouch that this method is delicious
This is the salsa, gravy I prefer on my cheese or beef enchiladas , unfortunately the TexMex restaurants DFW push a meat chili gravy.

This reminds me of my Dad watching my Mom make it. He’d wait for her to pour out all the blender. Then he’d get the blender container and clean it with bread. SOP 10:43 10:43 IT UP! He loved that pure chili flavor.
What is that oG or what powder did you put in ?
I toast the chiles in the pan first. And my own twist is I add fresh roasted and peeled jalapeno to the mix.
I wonder if this would taste good if i added it to your caldo de res recipe. Maybe ill just stick with your salsa de verde though!

Arnie I made your recipe last night. The sauce is very bitter. I found and used the exact same Chili’s you did and they were very nice and fresh. How can I get rid if the bitterness. I dont want to throw it away.
