I use a tortilla press and a gallon zip loc bag. You cut the zipper part off and slit the sides open. I leave the bottom seam intact. My hubby eats Dutch baby pancakes with lemon juice and powdered sugar. Thank you for all the inspiration! I’ve been cooking for 30 years and the burnout is real!! ❤

Yorkshire pudding is similar to the German pancake just doesn’t have sugar in it. Yorkshire pudding is usually served with roast beef. My English mother made it often. Love following you.

For the Dutch Baby pancake…I used to put powdered sugar and a squeeze of lemon juice. It was so tasty. I haven't made one of those in years. Your whole Mexican meal looks good to me. I've never made my own corn tortillas either. Should try I suppose. Looks like yours turned out great as a casserole. I love how you adapt and go with the flow…

I love watching all the creative ways you use the foods in your pantry. it's definitely helped me when I've run out of ideas for meals in our house. I've also had my produce get a little past prime a few times. I end up shredding my squash and tossing them in pasta or a quick bread for a nice nutritional addition…. and slightly overripe peaches are excellent in regular oatmeal or an oatmeal bake. I love finding ways to incorporate food that otherwise would have been tossed to the chickens.

Make them thicker and use a gallon zip lock bag cut in half instead of wax or parchment paper. I make my corn tortillas a little bigger than a saucer but smaller than a bread or salad plate perhaps 5 inches in diameter. Yours were a little too thin. But good try. Maybe not let them sit too long.

Wish I could eat your recipes, but I’m Celiac and diabetic. I got these two diseases in my fifties and have cooked from scratch since my teens. Still cook from scratch, just not what I can’t eat. I do make my husband’s favorite cake on his birthday, and cook most of the holiday favorites, including pies, even though it’s just for everyone else. Mexican food is very easy to eat and cook because corn tortillas can be used instead of flour.

Hey your doing great! I once got so tired I grabbed what I thought was stewed tomatoes for my chilli and it was pie pumpkin. Turned out ok but not the best I've ever made.

I used to roll my enchiladas until my daughter-in-law showed me how to make it like you did here. So much easier and Everyone likes it just as well.😊
