    different question. what do you have in between the grill plate handles and assembly itself. coming from commercial flat tops and being right handed, im used to using that left side wall for lifting my food. i cant do it with my new flatrock because food falls through the handle

    You lost me at over easy. But that’s OK, cause I’ll do me. Over medium. Looks fantastic. The corn sounds good. Even the black beans. Maybe a sprinkling of cotijo (?). ~cheese. Gonna have to give this a shot when the weather in East Tennessee gets back up to breakfast griddling weather.

    This is a really good recipe. I was sure there would be something wrong with the chorizo potatoes, but nope, just the big tube of chorizo and the taters like it should be. Maybe more chorizo to potato ratio. They are great just by themselves for breakfast, my wife makes them every once in a while. Good thing you didn't change it even if the chorizo is not your favorite.

    Probably a dumb question but I've never heard of ghee so I looked it up and saw it's a healthier fat. First question, what kind of fat is it and where do you get it? I've never seen it in a grocery store but I've never looked for it either.
